The bread was the only carb source to begin with.

A standard BLT gets nearly all of its carbs from the bread, so swapping in cucumber rounds as the base removes that source instead of working around it. Cream cheese and mayonnaise mixed with chipotle powder give the spread its texture, so nothing here depends on bread to hold together. Bacon, avocado and tomato bring the familiar BLT flavor, and the jalapeño adds heat without adding meaningful carbs. That leaves this at 8g net carbs a serving, most of it from the tomato and avocado rather than the cucumber.

Ingredients

  • 6 slices bacon
  • 1 English cucumber, medium, sliced into rounds
  • 0.25 cup mayonnaise, for smoky chipotle mayo
  • 1 avocado, large, sliced
  • 2 tomatoes, sliced and cut into portions
  • 0.25 cup cilantro, chopped
  • 2 jalapeños, medium, thinly sliced
  • 1 tsp chipotle powder, or minced chipotle peppers
  • 1 tsp smoked paprika
  • 4 oz cream cheese, softened
  • 0.5 tsp garlic powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. 1

Place bacon slices in a single layer in a cold, large skillet. Heat over medium heat.

  2. 2

Cook bacon, flipping as needed, until cooked through and crispy, about 10 to 12 minutes.

  3. 3

As bacon slices finish cooking, remove from heat and place on a paper-towel-lined plate to drain. Set aside to cool.

  4. 4

Meanwhile, slice cucumber at an angle into 12 slices.

  5. 5

Once the bacon is cooled, break into smaller strips.

  6. 6

In a small bowl, mix mayonnaise, cream cheese, chipotle powder, smoked paprika, garlic powder, salt, and black pepper until smooth.

  7. 7

    Thinly slice the jalapeños.

  8. 8

Assemble the BLT bites by spreading each cucumber slice with smoky chipotle mayo.

  9. 9

Top with avocado slices, tomato pieces, crispy bacon, and jalapeño slices.

  10. 10

Garnish with chopped cilantro and serve immediately.

Net carbs here means total carbohydrate (13g) minus fiber (5g). There are no sugar alcohols in this recipe, so nothing else is subtracted. Also per serving: 5g sugar, 539mg sodium.

Nutrition is calculated from ingredient data and will vary with brands, sizes and exactly how much mayo ends up on each bite. Treat it as close, not exact.

Milder heat. Remove all jalapeño seeds and membranes before slicing for a milder bite.

Serve fresh. These are best served right after assembling, while the cucumber is still crisp.

Make ahead. The chipotle mayo and bacon can both be made ahead for faster assembly.

Extra smoky. Use smoked bacon and a pinch of extra smoked paprika for more depth.
