One pan means nothing is hiding the carbs.
Roasting the salmon and zucchini on the same sheet pan isn't just about fewer dishes. It means both cook in dry heat instead of a sauce, which is where a lot of dinner recipes quietly add sugar or a cornstarch slurry to thicken things. There's nothing here to thicken or sweeten, so the carbs stay close to what the zucchini itself carries. Net carbs land at 3g a serving, most of it from the vegetable rather than the fish.

Nutrition per serving
Net carbs here means total carbohydrate (4g) minus fiber (1g). There are no sugar alcohols in this recipe, so nothing else is subtracted. Also per serving: 3g sugar, 84mg sodium.
Nutrition is calculated from ingredient data and will vary with brands, sizes and the fat content of the salmon. Treat it as close, not exact.
Extra vegetables. Asparagus or broccoli both work added alongside the zucchini.
Crispier zucchini. Avoid overcrowding the sheet pan, or the zucchini steams instead of browning.
Batch note. Leftovers keep in the fridge for up to 2 days.
