Low carb

## A breakfast that is actually a meal.

This low-carb breakfast bowl is built the way a dinner plate is built: a real serving of protein, a pile of vegetables, and some fat to finish. It's the savory option for mornings when toast, cereal or sweetened yogurt has you hungry again by ten.

Each bowl carries 32g of protein and 7.6g of net carbs. The turkey and the egg do most of the work. Cauliflower rice stands in for the potatoes or grains a breakfast bowl usually sits on, which is where most of the carbohydrate would otherwise come from.

Many people find a first meal built this way holds them longer than one built around starch. It's food, though. It won't treat anything, and how your own blood sugar responds will vary.

## Cook the water out first

The one thing that can spoil this bowl is water. Cauliflower rice gives off a lot of it, frozen cauliflower rice most of all, and zucchini adds more.

So the cauliflower goes into the hot pan on its own for a couple of minutes before anything else joins it. Once the pan looks dry, add the zucchini and pepper. You get vegetables with a little color on them instead of a soft, steamed pile.

Dry pan, tender vegetables. If there's liquid in the bottom, give it another minute.

### Ingredients

- 1 tbsp extra-virgin olive oil , divided
- 225 g lean ground turkey , 93% lean (8 oz)
- ½ tsp smoked paprika
- ¼ tsp ground cumin
- ¼ tsp garlic powder
- 200 g cauliflower rice , fresh or frozen (2 cups)
- 1 small zucchini , about 120 g each, diced
- ½ medium red bell pepper , about 60 g per half, diced
- 60 g baby spinach (2 packed cups)
- 2 large eggs
- ½ ripe avocado , about 100 g of flesh per half, sliced
- Black pepper and salt to taste , not included in the nutrition
- Chopped cilantro or parsley and lime wedges , optional, not included in the nutrition

### Instructions

1. 1
Heat two thirds of the olive oil in a large nonstick skillet over medium heat.

2. 2
Add the turkey and break it into small pieces.

3. 3
Season with the smoked paprika, cumin, garlic powder and a little black pepper.

4. 4
Cook for 6 to 8 minutes, stirring, until no pink remains and a food thermometer reads 165°F (74°C).

5. 5
Transfer the turkey to a clean plate.

6. 6
Add the cauliflower rice to the same skillet and cook for 2 to 3 minutes, until any water has cooked off.

7. 7
Add the zucchini and bell pepper and cook for 5 to 7 minutes, stirring now and then, until tender.

8. 8
Stir in the spinach and cook for about a minute, until it wilts.

9. 9
Return the turkey to the skillet and warm everything through. Taste, and add salt only if it needs it.

10. 10
Heat the remaining oil in a second small skillet over medium heat.

11. 11
Cook the eggs until the whites and yolks are firm, or scramble them until fully set.

12. 12
Divide the turkey and vegetables between the bowls.

13. 13
Top each bowl with one egg and a quarter of an avocado.

14. 14
Finish with the herbs and a squeeze of lime if using, and serve right away.

### Nutrition per serving

**434** calories **32 g** protein **29 g** fat **7.6 g** net carbs

One serving is one bowl, half the recipe, with one egg and a quarter of an avocado. Net carbs here means total carbohydrate (15.1g) minus fiber (7.5g). There are no sugar alcohols in this recipe, so nothing else is subtracted. Also per serving: 5.4g sugar, 213mg sodium, with no salt added. Doubling or tripling the recipe changes the batch, not the serving, so these figures stay the same.

Calculated per ingredient from USDA FoodData Central, using 93% lean turkey at raw weight, plain raw cauliflower for the cauliflower rice, and all of the olive oil. The herbs and lime are left out.

Nutrition is calculated from ingredient data and will vary with brands, vegetable sizes and how much ends up in each bowl. Treat it as close, not exact.

### Storage and safety

The turkey and vegetable mixture keeps in a covered container in the fridge for 3 to 4 days. Reheat it until steaming hot, to 165°F, per USDA guidance. Cook the eggs and slice the avocado fresh.

If you take insulin or another medicine that lowers blood sugar, talk to the doctor who manages it before cutting carbohydrate sharply.

## Where the carbs come from

Turkey and olive oil carry none. Almost everything on the card comes from the vegetables, and no single one of them carries much.

- cauliflower rice: about 3g net carbs a bowl
- zucchini: about 1.3g
- red bell pepper: about 1.2g
- avocado: about 0.9g, because most of its carbohydrate is fiber
- spinach, egg and spices together: about 1.2g

So the carbohydrate arrives in small amounts, alongside protein, fat and fiber. A breakfast built on toast or hash browns delivers most of it in one go.

## Total carbs or net carbs?

Both numbers are on the card. Total carbohydrate on a US label includes fiber. Net carbs is total carbohydrate minus fiber, which is how most low-carb approaches count: 15.1g minus 7.5g gives 7.6g a bowl here.

Net carbs is a practical convention, not a regulated label term, and it doesn't predict exactly how your own blood sugar will respond. Pick one method and count it the same way every day. If a clinician has given you a carb-counting method for diabetes, use theirs.

## If you take medication that lowers blood sugar

Cutting carbohydrate substantially changes how much glucose-lowering medication your body needs. The NIH lists [insulin and medicines such as sulfonylureas among the causes of low blood glucose](https://www.niddk.nih.gov/health-information/diabetes/overview/preventing-problems/low-blood-glucose-hypoglycemia), and names not eating enough carbohydrate as one of the triggers.

If you use either and this bowl would replace a higher-carb breakfast, talk to the doctor who manages your medication before you make the change, and don't adjust doses yourself. Shakiness, sweating, confusion or unusual dizziness are worth telling them about promptly.

## Will this stop a blood sugar spike?

No meal can promise that. This bowl carries less carbohydrate than a breakfast built on potatoes, bread or sweetened cereal, and it comes with protein, fat and fiber. Many people find that makes for a steadier morning. It isn't a guarantee.

Portion size, sleep, stress, activity and medication all move the reading too. ## Swaps that work

**Ground beef instead of turkey.** 90% lean beef works well and leaves the carbs unchanged. It adds about 30 calories and 2g of fat a bowl. Cook ground beef to 160°F.

**Ground chicken.** Same carbs, same 165°F target.

**Firm tofu.** Crumble in the same weight in place of the turkey. It adds about 0.5g net carbs a bowl and a little less protein.

**No egg.** Leave it out and the bowl drops about 0.4g net carbs and 6g of protein. A little extra turkey makes up the protein.

**No avocado.** That brings the bowl to about 6.7g net carbs and takes out 80 calories.

**Sausage.** Fine, but read the label. Some breakfast sausage has added sugar, and the carbs on the card will no longer apply.

**Other vegetables.** Mushrooms, kale or asparagus can stand in for the zucchini or pepper. The carbs will shift a little either way.

The recipe has no dairy in it as written.

## Make it ahead

Cook a double batch of the turkey and vegetables, divide it into four containers, and refrigerate. [USDA guidance](https://www.fsis.usda.gov/food-safety/safe-food-handling-and-preparation/food-safety-basics/leftovers-and-food-safety) puts cooked leftovers at 3 to 4 days refrigerated and says to reheat them to 165°F.

In the morning that leaves one job: cook an egg while the bowl reheats. Slice the avocado at the last minute so it doesn't brown. For a week of mornings that mostly decide themselves, this fits neatly into [low-carb meal planning](https://www.lowcarbdiet.solutions/low-carb-meal-planning/).

## Common questions

### Is this a keto breakfast bowl?

It's a low-carb bowl, and it doesn't need a strict ketogenic plan to make sense. At 7.6g net carbs it fits most low-carb targets comfortably. Whether it fits a tighter one is about your whole day, not this one meal.

### Can I use frozen cauliflower rice?

Yes. Put it in the pan straight from frozen and give it the extra minute or two it needs for the water to cook off before the other vegetables go in.

### Can I eat it for lunch or dinner?

Yes. Nothing about it is specific to the morning. It's turkey, vegetables and an egg, and it works just as well at 7pm.
