The starch was never what made this a casserole.

A traditional casserole gets its bulk from pasta, rice or a crunchy canned topping, and that's usually where most of the carbs sit. Here the bulk comes from broccoli and diced turkey instead, so the creamy texture comes from the cream of mushroom soup, heavy cream and cheddar rather than a starchy filler. Broccoli also holds its shape under baking better than pasta does sitting in sauce, which is part of why this keeps its texture as leftovers. The result lands at 10g net carbs a serving with real dinner-portion protein from the turkey.

Nutrition is calculated from ingredient data and will vary with brands, sizes and exactly how much filling ends up in each portion. Treat it as close, not exact.

Turkey swaps. Rotisserie or leftover holiday turkey both work here, and so does cooked chicken if that's what's on hand.

Soup swap. Cream of chicken soup works in place of cream of mushroom if you prefer that flavor.

Broccoli. Fresh steamed broccoli works in place of frozen. Either way, drain it well first so the casserole doesn't turn watery.

Batch note. Leftovers reheat well covered, in the oven or the microwave.
