## All of taco night, minus the part doing the damage.

This low-carb taco bowl with cauliflower rice keeps the smoky beef, the cold crunch and the lime, and drops the rice, beans and shell that make a burrito bowl so heavy on carbs. What's left is protein, fat and fiber in one bowl, a combination many people find keeps them full well past dinner.

The cauliflower is there to carry everything else. At [4.97g of carbohydrate and 2g of fiber per 100g on USDA's figures](https://fdc.nal.usda.gov/food-details/169986/nutrients), the 100g in each bowl costs about 3g net. The avocado does more than it looks like it does, too. It brings most of the fiber and a good share of the fat. If you'd rather skip a base altogether, the [crispy cheddar keto taco cups](https://www.lowcarbdiet.solutions/keto-taco-cups/) use the same seasoned beef.

## How to keep cauliflower rice from going soggy

Cook it like a vegetable, not a grain. It doesn't need water or a lid.

Use a wide skillet and leave it uncovered so the moisture has somewhere to go. Stop when the cauliflower is tender but still has some bite. Frozen cauliflower rice needs a few extra minutes, and the pan should be dry before the lime juice goes in.

Keep the beef in its own pan until the bowls are built. That way the cauliflower isn't sitting in sauce while you finish the toppings.

Uncovered, in a wide pan, until no liquid is left.

### Ingredients

Taco Beef

- 1 teaspoon olive oil
- 0.5 medium onion, finely diced (about 75 g)
- 1 pound ground beef, 90% lean (about 450 g)
- 2 garlic cloves, minced
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon mild chili powder blend (not cayenne)
- 0.5 teaspoon dried oregano
- 0.25 teaspoon each salt and black pepper
- 1 tablespoon tomato paste
- 0.25 cup water

Lime Cauliflower Rice

- 2 teaspoons olive oil
- 4 cups plain cauliflower rice, fresh or frozen (about 400 g)
- 0.25 teaspoon salt
- 1 tablespoon fresh lime juice
- 2 tablespoons chopped fresh cilantro

Toppings and Lime Crema

- 2 cups shredded romaine lettuce (about 95 g)
- 0.75 cup diced tomatoes (about 150 g)
- 1 medium avocado, sliced (about 150 g)
- 0.5 cup shredded cheddar (about 56 g)
- 0.25 cup regular sour cream (about 60 g)
- 1 tablespoon fresh lime juice
- 1 to 2 teaspoons water, to thin the crema

### Instructions

Prep the Toppings

1. 1
Wash and dry the lettuce, dice the tomatoes and shred the cheese.

2. 2
Stir the sour cream and 1 tablespoon of lime juice together in a small bowl. Add water a teaspoon at a time until it drizzles off a spoon. Refrigerate the toppings while you cook, and leave the avocado whole until you serve.

Cook the Taco Beef

1. 3
Heat 1 teaspoon of olive oil in a large skillet over medium-high heat. Add the onion and cook for about 3 minutes, stirring now and then.

2. 4
Add the beef and cook for 6 to 8 minutes, breaking it into small pieces. Spoon off excess fat if you like.

3. 5
Stir in the garlic, cumin, paprika, chili powder, oregano, salt, pepper and tomato paste. Cook for 30 to 60 seconds, stirring.

4. 6
Add the water and simmer 2 to 3 minutes, until the sauce coats the beef without pooling in the pan. Check the beef reaches 160°F (71°C) on a food thermometer.

Make the Lime Cauliflower Rice

1. 7
Meanwhile, heat the remaining 2 teaspoons of olive oil in a second wide skillet over medium-high heat. Add the cauliflower rice and salt.

2. 8
Cook uncovered, stirring occasionally, for 5 to 7 minutes if fresh or 8 to 10 minutes if frozen, until tender with no liquid left in the pan.

3. 9
Take the pan off the heat and stir in the lime juice and cilantro.

Build the Bowls

1. 10
Divide the cauliflower rice and beef between four bowls.

2. 11
Slice the avocado and add it with the lettuce, tomatoes and cheddar. Drizzle with the lime crema and serve straight away.

### Nutrition per serving

**433** calories **30.3 g** protein **28.6 g** fat **9.9 g** net carbs

Net carbs here means total carbohydrate (16.5g) minus fiber (6.7g). There are no sugar alcohols in this recipe, so nothing else is subtracted. Also per serving: 5.6g sugar, none added, and about 504mg sodium. Calculated per ingredient from USDA FoodData Central, using raw 90% lean ground beef with no fat drained, and including a full quarter of the avocado, cheddar and sour cream.

Nutrition is calculated from ingredient data and will vary with brands, sizes and how much fat you spoon off. Treat it as close, not exact. To compare other everyday foods the same way, keep the [free carb counts list](https://www.lowcarbdiet.solutions/your-free-carb-counts-for-keto-list/) handy.

## Swaps that work

**Ground turkey or chicken.** Use the same weight in place of the beef, add a splash of water if the filling looks dry, and cook it to 165°F (74°C), the poultry figure on the [FoodSafety.gov safe minimum internal temperature chart](https://www.foodsafety.gov/food-safety-charts/safe-minimum-internal-temperatures). The nutrition numbers will change.

**Dairy-free.** Leave out the cheddar and sour cream. Mash a little of the avocado with lime juice and a splash of water and use that as the creamy topping instead.

**Heat at the table.** Keep the beef mild and put sliced jalapeños or hot sauce out separately, so everyone sets their own level.

**Why keep the avocado.** It carries most of the fiber in the bowl and a good share of the fat. The guide to [healthy fats on a low-carb diet](https://www.lowcarbdiet.solutions/healthy-fats-for-low-carb-diet/) covers why that pairing matters.

**Want another skillet dinner?** The [one-skillet ground beef and cabbage stir fry](https://www.lowcarbdiet.solutions/ground-beef-and-cabbage-stir-fry/) is the easy choice on a night you'd rather skip the cauliflower.

Build the bowls just before eating so the lettuce stays crisp.

## Meal prep and storage

Store the cooked beef and cauliflower rice apart from the lettuce, tomatoes, avocado and crema.

Divide the warm leftovers into shallow containers and get them into the fridge within 2 hours, or within 1 hour if it's above 90°F (32°C). Keep the fridge at 40°F (4°C) or below, and use the cooked beef and cauliflower rice within 3 to 4 days, in line with [USDA guidance on leftovers and food safety](https://www.fsis.usda.gov/food-safety/safe-food-handling-and-preparation/food-safety-basics/leftovers-and-food-safety).

Reheat only the beef and cauliflower rice, to 165°F (74°C), then add the cold toppings and freshly sliced avocado. A splash of water loosens the beef as it warms.

If you're building a week of lunches around this bowl, the [low-carb meal planning guide](https://www.lowcarbdiet.solutions/low-carb-meal-planning/) shows how to batch the base parts without eating the same thing every day.

## Low-carb taco bowl questions

### How many carbs are in a low-carb taco bowl?

This one comes to 9.9g net carbs a serving, from 16.5g of total carbohydrate minus 6.7g of fiber. The cauliflower and avocado supply most of both numbers. You could skip the avocado to save under 1g net, but you would lose most of the fiber that makes the bowl filling.

### Can I make cauliflower rice without a food processor?

Yes. Grate the florets on the large holes of a box grater, which gives you small, even pieces that cook quickly. Measure about 4 cups, or weigh 400g, for this recipe. Pat the grated cauliflower dry with a clean towel if it looks wet before it goes in the pan.

### Can I use frozen cauliflower rice?

Yes. Buy a plain bag with no sauce or seasoning, and add it to the skillet straight from frozen. It holds more water than fresh, so give it 8 to 10 minutes uncovered and keep cooking until the pan is dry before you add the lime juice and cilantro.

### Can I meal prep low-carb taco bowls?

Yes, if you keep the parts separate. Store the cooked beef and cauliflower rice in shallow containers in the fridge for up to 3 to 4 days, and keep the lettuce, tomato and crema apart. Reheat the warm parts to 165°F, then add fresh avocado and the cold toppings.

### What can I use instead of cilantro?

Leave it out, or use a little chopped flat-leaf parsley for the same fresh green note without the soapy taste some people get from cilantro. Keep the lime juice either way. It is doing more of the work in the cauliflower rice than the herbs are.
