Low carb

## A snack that holds you until dinner

This plate pairs a little carbohydrate from vegetables with protein and fat from the dip, the egg and the seeds. That mix tends to digest more slowly than a sweet snack or a handful of crackers, so many people find it carries them to the next meal without a slump. How your own blood sugar responds will vary.

Everything is cold and crunchy, and nothing needs cooking if your eggs are already boiled. It takes about ten minutes, most of it spent cutting vegetables.

## Why the dip makes the plate

Plain vegetables and a plain egg are fine, but they get boring by the third day. The dip fixes that. Lemon brightens the cottage cheese, dill gives it a fresh, savory taste, and a pinch of garlic powder makes it taste like something you'd put out for guests.

Mash the cottage cheese for a few seconds if lumps bother you. Leave it as it is if you like the texture. Either way, taste before you add salt. Cottage cheese is already salty.

If you like this base and want it as a full breakfast, the [savory cottage cheese bowl](https://www.lowcarbdiet.solutions/savory-cottage-cheese-bowl/) uses the same idea with more cottage cheese and chopped toppings.

Scale

### Ingredients

- 226 g 2% lowfat cottage cheese , small or large curd (8 oz)
- 1 tsp fresh lemon juice
- 1 tbsp chopped fresh dill
- ⅛ tsp garlic powder
- ⅛ tsp ground black pepper
- 2 large hard-boiled eggs , peeled
- 150 g cucumber , with peel (½ medium)
- 74 g red bell pepper (1 small)
- 4 medium radishes
- 2 tbsp roasted pumpkin seeds , unsalted
- 1 tsp extra-virgin olive oil , optional, not included in the nutrition

The times assume the eggs are already boiled. If they aren't, boil and cool them first.

### Instructions

1. 1
Spoon the cottage cheese into a small bowl. For a smoother dip, mash it with a fork for a few seconds.

2. 2
Stir in the lemon juice, dill, garlic powder and black pepper. Add the olive oil now if you are using it.

3. 3
Cut the cucumber into spears, the bell pepper into strips and each radish into quarters.

4. 4
Halve the eggs lengthwise.

5. 5
Divide the dip between two small bowls or the edges of two plates.

6. 6
Add one egg, half the vegetables and half the pumpkin seeds to each plate. Eat right away.

### Nutrition per serving

**235** calories **21 g** protein **11.7 g** fat **10.9 g** net carbs

One serving is one plate, half the recipe, with one egg. Net carbs here means total carbohydrate (12.7g) minus fiber (1.8g). There are no sugar alcohols in this recipe, so nothing else is subtracted. Also per serving: 8.2g sugar, most of it natural milk sugar from the cottage cheese, and 418mg sodium, with no salt added. Doubling or tripling the recipe changes the batch, not the serving, so these figures stay the same.

Calculated per ingredient from USDA FoodData Central, using 2% cottage cheese, hard-boiled eggs and unsalted roasted pumpkin seeds. The optional olive oil is left out. It adds about 20 calories and 2g fat a plate.

Nutrition is calculated from ingredient data and will vary with brands, vegetable sizes and how much ends up on each plate. Treat it as close, not exact.

### Storage and safety

Assemble the plate just before you eat it. Keep the cottage cheese and boiled eggs in the fridge until then.

If you take insulin or another medicine that lowers blood sugar, talk to the doctor who manages it before cutting carbohydrate sharply.

## Where the carbs come from

About half the carbohydrate on the plate is the cottage cheese's own milk sugar. Per plate:

- cottage cheese: about 5.4g net carbs
- cucumber: about 2.4g
- red bell pepper: about 1.5g
- pumpkin seeds: about 0.6g
- egg: about 0.6g
- radishes, lemon, dill, garlic and pepper together: about 0.5g

So the type of cottage cheese moves the number more than any vegetable does. Plain is the one to buy. Flavored and "fruit on the bottom" tubs have added sugar, and the card's numbers won't apply.

## If you take medication that lowers blood sugar

Changing how much carbohydrate you eat, or when you eat it, changes how much glucose-lowering medication your body needs. The NIH lists [insulin and medicines such as sulfonylureas among the causes of low blood glucose](https://www.niddk.nih.gov/health-information/diabetes/overview/preventing-problems/low-blood-glucose-hypoglycemia), and names not eating enough carbohydrate as one of the triggers.

If your diabetes team has given you a set snack to take with your medication, follow their plan. Talk to them before swapping it for this plate, and don't adjust doses yourself.

## Swaps that work

**No egg.** About 10.3g net carbs a plate. A few strips of dry beef jerky or some leftover steak fill the gap well. Check the jerky label, as some brands add sugar. Not included in the nutrition.

**No pumpkin seeds.** About 10.3g net carbs a plate. A few sliced olives give a similar salty finish. Not included in the nutrition.

**Plain Greek yogurt instead of cottage cheese.** Smoother and tangier. Carbs vary by brand, so check the label.

**Parsley or chives instead of dill.** Same method, different flavor.

**Celery sticks instead of radishes.** Or simply more cucumber.

There's no real dairy-free version of the dip. Mashed avocado with lemon is a good plate of its own, but it's a different snack.

## Take it to work

Boil a few eggs ahead and keep them in the fridge. Cut the vegetables the night before and store them in a covered container. The dip keeps in its own small pot, so the vegetables stay crisp.

Pack it in an insulated bag with a cold pack. The FDA advises [not leaving cooked eggs out of the fridge for more than 2 hours](https://www.fda.gov/food/buy-store-serve-safe-food/what-you-need-know-about-egg-safety), or more than 1 hour when it's above 90°F. Add the pumpkin seeds last so they stay crunchy.

For a week of snacks and meals that mostly decide themselves, this fits into [low-carb meal planning](https://www.lowcarbdiet.solutions/low-carb-meal-planning/).

## Common questions

### Is this a keto snack?

It's a low-carb snack, and it doesn't need a strict ketogenic plan to make sense. Whether it fits a tighter target depends on your whole day, not this one plate.

### Can I boil the eggs in the same ten minutes?

No. The ten minutes is for putting the plate together with eggs that are already cooked and cold. Boiling and cooling them takes longer.

### Will this plate stop a blood sugar spike?

No food can promise that. The amount of carbohydrate, the portion, what else you eat that day and your own body all play a part. The CDC explains how [meal planning helps manage blood sugar](https://www.cdc.gov/diabetes/healthy-eating/diabetes-meal-planning.html).

### How many carbs are in one plate?

About 10.9g net carbs, or 12.7g total carbohydrate, using plain 2% cottage cheese. Another brand or fat level will change that a little, so check your tub's label.
