The "bread" is baked egg, not flour.

This sandwich skips bread by using baked egg rounds instead: whipped egg whites folded into a cream cheese and egg yolk base, then baked into rounds sturdy enough to hold a real sandwich filling. That swap is what keeps the carbs down. The count comes from the avocado, tomato and a touch of garlic powder, not from a bun. Bacon, cheddar and avocado are all naturally low in carbs on their own.

Ingredients

  • 6 eggs, large, separated
  • 115 g cream cheese, room temperature
  • ¼ tsp garlic powder
  • 4 slices sharp cheddar cheese
  • 1 large avocado
  • ½ medium tomato
  • 12 slices bacon, thick-cut, cooked crispy
  • Salt and black pepper, to taste

Instructions

  1. 1

Preheat the oven to 325°F (160°C) and line two large baking sheets with parchment paper or silicone baking mats. Set aside.

  2. 2

Add the 6 egg whites to the bowl of a stand mixer, or a large mixing bowl if using a hand mixer. Mix on high speed until stiff peaks form. Set aside.

  3. 3

In a separate bowl, whisk the cream cheese with 4 of the egg yolks and the garlic powder. (Reserve the remaining egg yolks for another use.) Season with salt and black pepper, to taste, and stir to combine.

  4. 4

Working in batches, gently fold the whipped egg whites into the cream cheese mixture with a spatula until combined. Do not overwork.

  5. 5

Spoon about ¼ cup (60 ml) of the mixture onto the prepared baking sheets to make 8 circles. Gently spread each into a rounded disc about ½ inch (1.3 cm) high, leaving space between them.

  6. 6

Bake until the egg rounds are golden and set in the center, about 15 to 20 minutes.

  7. 7

Remove from the oven and trim each egg round with a cookie cutter, if you'd like a neater edge.

  8. 8

Place a slice of cheddar on four of the rounds and return to the oven just until the cheese melts, about 2 minutes.

  9. 9

While the rounds bake, cook the bacon until crispy and set aside.

  10. 10

Slice the avocado and thinly slice the tomato.

  11. 11

Top each cheese-covered round with 2 to 3 avocado slices, a thin tomato slice, and one strip of bacon broken in half.

  12. 12

Close each sandwich with a plain egg round. Serve immediately, with 2 extra strips of crispy bacon on the side.
